BBQ Jacket Potatoes with Cheddar & Chive

Fluffy jacket potatoes cooked on the BBQ, then split and filled with butter, mature Cheddar and fresh chives. A proper British comfort side that works brilliantly alongside grilled meats.

Ingredients
  

For the potatoes
  • 4 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp coarse sea salt
For the filling
  • 40 g butter about 1 tbsp per potato
  • 150 g mature Cheddar grated
  • 2 tbsp fresh chives finely chopped
  • Salt and pepper to taste

Method
 

Step 1

  1. Scrub the potatoes and pat dry. Prick each a few times with a fork. Rub all over with olive oil and sprinkle with sea salt.

Step 2

  1. Wrap each potato tightly in foil.

Step 3

  1. Preheat the BBQ to medium heat. Place the potatoes around the edges of the grill or in an indirect zone.

Step 4

  1. Cook for 45-60 minutes, turning occasionally, until a skewer slides into the centre with no resistance. Larger potatoes may take a little longer.

Step 5

  1. Remove the foil, then place the potatoes back on the grill for 5-10 minutes to crisp up the skins, turning once.

Step 6

  1. Split each potato open, fluff the insides with a fork and add butter, a good handful of Cheddar and chives. Season to taste and serve hot.

Notes

You can par-cook the potatoes in the microwave or oven, then finish on the BBQ for 15-20 minutes to save time.
Add crispy bacon bits or leftover pulled pork on top to turn this into more of a main.
