Step 1
- Scrub the potatoes and pat dry. Prick each a few times with a fork. Rub all over with olive oil and sprinkle with sea salt.
Step 2
- Wrap each potato tightly in foil.
Step 3
- Preheat the BBQ to medium heat. Place the potatoes around the edges of the grill or in an indirect zone.
Step 4
- Cook for 45-60 minutes, turning occasionally, until a skewer slides into the centre with no resistance. Larger potatoes may take a little longer.
Step 5
- Remove the foil, then place the potatoes back on the grill for 5-10 minutes to crisp up the skins, turning once.
Step 6
- Split each potato open, fluff the insides with a fork and add butter, a good handful of Cheddar and chives. Season to taste and serve hot.
Notes
You can par-cook the potatoes in the microwave or oven, then finish on the BBQ for 15-20 minutes to save time.
Add crispy bacon bits or leftover pulled pork on top to turn this into more of a main.
