British Pork Ribs with Brown Sauce BBQ Glaze

Pork ribs slowly cooked until tender, then finished on the BBQ with a sticky glaze made from British brown sauce, honey and cider. A mash-up of American-style ribs with a distinctly British flavour profile.

Ingredients
  

For the ribs
  • 2 racks pork ribs about 1.5-2 kg total, membrane removed
  • 1 tbsp vegetable or rapeseed oil
  • 2 tsp fine sea salt
  • 1 tsp black pepper
  • 2 tsp smoked paprika
  • 1 tsp garlic granules
  • 1 tsp onion granules
For the brown sauce BBQ glaze
  • 150 ml brown sauce HP-style
  • 3 tbsp tomato ketchup
  • 2 tbsp runny honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp English mustard
  • Pinch of chilli flakes optional

Method
 

Step 1

  1. Heat the oven to 150 C (130 C fan). Line a large tray with foil.

Step 2

  1. Mix salt, pepper, smoked paprika, garlic and onion granules. Rub the ribs with oil, then coat all over with the spice rub. Place on the tray, meaty side up, and cover tightly with foil.

Step 3

  1. Roast for 2 1/2-3 hours, or until the ribs are tender and the bones twist slightly when pulled.

Step 4

  1. Meanwhile, combine all glaze ingredients in a saucepan. Bring to a simmer and cook for 5-10 minutes until glossy and slightly thickened. Taste and adjust seasoning.

Step 5

  1. Preheat the BBQ for medium-high direct and indirect zones.

Step 6

  1. Transfer the cooked ribs to the BBQ over indirect heat. Brush generously with the brown sauce glaze. Cook for 15-20 minutes, turning and brushing with more glaze every 5 minutes, until sticky and lightly charred.

Step 7

  1. Rest for 10 minutes, then slice between the bones and serve with extra glaze.

Notes

For very tender ribs, you can aim for an internal temperature of around 90-95 C before finishing on the grill.
Use spare ribs or baby back ribs. Both work well with this method.
