Grilled Strawberries & Cream Skewers

A simple BBQ dessert: strawberries threaded onto skewers, quickly grilled to intensify their sweetness, then served with a clotted-cream or whipped-cream dip. A playful nod to classic British strawberries and cream.

Ingredients
  

For the skewers
  • 400 g strawberries hulled, left whole if small or halved if large
  • 1 tbsp caster sugar optional
  • 1 tsp vanilla extract optional
  • 1 tbsp melted butter or neutral oil for brushing
For the cream dip
  • 150 ml double cream or whipping cream or use clotted cream for extra indulgence
  • 1 tsp icing sugar
  • 1/2 tsp vanilla extract

Method
 

Step 1

  1. If using wooden skewers, soak them in water for 20-30 minutes.

Step 2

  1. Thread strawberries onto skewers. If desired, toss gently with caster sugar and vanilla, then brush lightly with melted butter or oil.

Step 3

  1. In a bowl, whip the cream with icing sugar and vanilla until soft peaks form, or simply stir vanilla and a little icing sugar through clotted cream. Chill until serving.

Step 4

  1. Preheat the BBQ to medium heat.

Step 5

  1. Grill the strawberry skewers for 1-2 minutes per side, just until lightly warmed and showing a hint of char. They soften quickly, so do not walk away.

Step 6

  1. Serve immediately with the cream dip for dunking.

Notes

You can mix in a splash of Pimms or elderflower cordial to the cream for a more grown-up twist.
Grill some slices of pound cake or brioche alongside to turn this into more of a plated dessert.
