Grilled Corn on the Cob with Garlic Herb Butter

Sweetcorn cobs lightly charred on the BBQ and slathered in garlic and herb butter, a staple side on UK BBQ favourite lists and summer supermarket ranges.

Ingredients
  

For the corn
  • 4 corn on the cob husks removed
  • 1 tbsp vegetable or rapeseed oil
  • Salt and pepper
For the garlic herb butter
  • 75 g unsalted butter softened
  • 2 garlic cloves finely grated
  • 1 tbsp fresh parsley finely chopped
  • 1 tbsp fresh chives finely chopped
  • Zest of 1/2 lemon
  • Pinch of salt and pepper

Method
 

Step 1

  1. In a small bowl, mix softened butter with garlic, parsley, chives, lemon zest, salt and pepper until well combined.

Step 2

  1. Brush the corn with oil and season with salt and pepper.

Step 3

  1. Preheat the BBQ to medium-high heat.

Step 4

  1. Grill the corn for 15-20 minutes, turning every few minutes, until tender and nicely charred in spots.

Step 5

  1. Transfer to a serving platter and immediately brush generously with garlic herb butter so it melts over the hot corn.

Step 6

  1. Serve with extra butter on the side if desired.

Notes

For extra smokiness, you can soak the corn in its husk for 30 minutes, grill in the husk, then finish briefly without it to char.
This recipe pairs well with almost any grilled meat or veggie main.
